Cupcake Tricks

Cupcakes are just the right size for those moments when you want something sweet. Baking those little snacks is a delicate process and one you shouldn't rush. By using cupcake tricks and tips, you will have cupcakes that look exactly like the ones you see in the bakery. Add this to my Recipe Box.

Cupcake Pan

Use at least two cupcake pans when baking your treats, keeping one on reserve. The pan should have space for at least six cupcakes, but no more than 12. Pans that make larger amounts may cause uneven baking, as it prevents air from effectively swirling around the metal. The exception is for miniature cupcake pans, which typically make 24 at a time. Place one pan directly in the oven and fill the second pan with more batter. When you pull the first batch out, put the second batch into the oven. Avoid putting raw cupcake batter in a hot pan, as it causes the cakes to start baking on the outside, leading to the outside cooking before the inside.

Mixing Ingredients

Set the ingredients for the cupcakes out on the counter for at least 30 minutes before mixing. Let the eggs, butter and any other cold ingredients reach room temperature. Mix the wet ingredients together and slowly incorporate into the dry ingredients. When you use cold ingredients and mix into warm ingredients, the cupcake batter develops lumps. Mix the ingredients until everything is just combined. Overmixing your ingredients leads to a dense, chewy cupcake.

Baking

Divide the batter evenly between your cupcake pans, making sure you put the same amount of batter in each cupcake liner. Use an ice cream scoop to ensure accuracy. Place the cupcakes inside the oven, but only when the oven has reached the correct temperature. Test for doneness by lightly touching the top of the cupcakes. The cupcakes should bounce back slightly. You can also push a toothpick into the inside of the cupcake. If the toothpick is clean, the cakes are done.

Decorating

Fill a piping bag with frosting and lightly squeeze the sides, pushing out any air bubbles. Decorate your cupcakes by placing the tip at the center of the cupcake and lightly squeezing on the piping bag. Rotate your hand in a clockwise motion, moving toward the outside of the cupcake. Add sprinkles or edible decorations for a professional look.
