Bunnies are a popular symbol for spring and Easter, so a bunny cake makes the perfect dessert for a springtime gathering of friends or family. Though your guests will be impressed with the complexity of this cake, you can actually use a boxed cake mix and two regular round pans for this adorable centerpiece. Kids too will be delighted by the looks and taste of this cake, so it would also be a perfect choice for a child's birthday celebration. Add this to my Recipe Box.
Preheat oven to 350 degrees or as called for on your cake recipe.
Mix the ingredients for your cake according to recipe or box instructions.
Pour batter into two 8- or 9-inch round pans and bake according to recipe directions. Cool completely.
Cut one of the cake layers in half across the diameter of the circle, forming two half-moon shapes. Set the other layer aside as you will only need one layer to make the bunny cake.
Stand the half-moon shapes on their cut ends next to each other on a tray covered with aluminum foil.
Spread frosting on the sides of the cake facing each other and press the halves together.
Cut a small wedge approximately 1/3 of the way up the curved end of the cake from the tray. The wedge should only be cut approximately halfway through the cake. This notch separates the head and body of the bunny.
Attach the wedge to the back of the bunny's "body" at the end furthest from the wedge to form the tail. Use frosting to attach the tail or insert a toothpick in the tail and poke it through the body for a firmer hold if desired.
Frost the entire bunny with white frosting, adding extra frosting on the sides to round out the body.
Sprinkle the entire body and head with 1 cup of shredded coconut to create "fur" for the bunny.
Press mini-marshmallows into the frosting on the tail.
Press jelly beans or chocolate chips into the head of the bunny for eyes and another jelly bean for the nose. Add licorice pieces for whiskers if desired.
Melt 1/2 cup of white chocolate chips.
Dip the cookies into the melted chocolate, using a brush to coat completely if necessary. Let the chocolate harden. You can also use a round cookie broken in half if you cannot find oblong-shaped cookies for the ears.
Press the chocolate-coated cookies into the top of the bunny's head to create ears. You can also simply cut ears out of construction paper if desired.
Mix the remaining 1/2 cup of shredded coconut with three drops of green food coloring in a plastic bag. Sprinkle around the bunny cake with a few jelly beans for decoration.
