Beach-themed cupcakes make for a delicious and fun-filled treat for your next pool party, luncheon, barbecue, kid's birthday or luau. Incorporating a tasty beach theme is both easy and economical, by using a store bought cake mix as well as a few additional items that you may already have in your kitchen cupboards. Line two cupcake tins with light blue papers. Bake the store bought mix according to the directions on the box for cupcakes and let cool.
Squeeze a few drops of yellow food coloring into the can of white frosting. Stir thoroughly until the frosting becomes a light shade of beige. Spread the frosting onto each cupcake.
Cut small 1-inch pieces of fruit roll-ups and place them on your cupcakes. Top the roll-up with a gummy bear to create a whimsical sunbather.
Place a colorful cocktail umbrella on each cupcake at a slight angle to complete your festive beach themed cupcakes.
